We're trying NOT eat fast-food, takeout, or eat out, so we went
shopping on Sunday and bought lots of fresh fruit and veggies and
meat. We didn't save any money because fruit and vegetables are
expensive, but I'm sure we're eating healthier/better!
Sunday night we had panfried mahi-mahi, oven-fried potato and sweet
poato wedges, tomato and fresh salad greens with tartare sauce.
Monday night we shared a huge tbone steak (I'm not a big beef-eater)
with baked potato, fresh corn on the cob, homemade garlic bread and
salad.
Tuesday night I roasted a chicken with cajun seasoning and made a huge
pan of roasted vegetables (yellow squash, baby beets, mushrooms as
well as the regular onion/carrot/sweet potato.) There were enough
veggies left that I had a big bowl of them for breakfast on Wednesday.
Wednesday I made a big pan of turkey lasagne, garlic bread and
side-salads.
Thursday I had leftover lasagne at lunchtime, and I made DH a big
dinner salad when he got home (he hates having the same dinner twice
in a row.)
I'm not sure what I'll make tonight but I think we'll have pork chops
and veggies.
