  1. DH's away for dinner, I had a laser procedure today so didn't feel much
    like cooking and I need to use up a few freezer items so I made - 2 beef
    eye of rounds browned then smothered with thinly slice onions and sliced
    mushrooms and left to saute in a different pan while I deglazed the
    first, using the first pan I poured in mixed Oriental veggies and a
    little hoisin sauce. Then I cut up a mellow yellow and roma tomato
    figuring that would be a good choice since I didn't feel like making
    rice for one and wasn't in the mood for potatoes. Besides my body needs
    the protein and anti-oxidants more than carbs today. In the meantime
    the first pan started sticking so I deglazed it and added a little
    Worchesteshire sauce and a thin slurry of just enough for gravy for the
    meat. The result was a nice gravy for the eye of round. The actual meal
    was quite filling with the flavours melding well. I'm having frozen
    blueberries stirred into plain yogurt for desert since blueberries are
    high up there in anti-oxidants. I have enough left over for a full meal
    for either DH or DS tomorrow.

    Nice stuff I think I'll forage tonight. A salad I do feel like for the dressing
    I want some red wine vinegar EVOO & salt. There's also some left over Meatloaf
    that's been calling my name.

  3. I came home tired after a long, stressful day at school and rummaged
    through the fridge....this is what I produced:

    smoked salmon, artichoke heart &carmalized onion quiche
    corn fritters
    bag o'salad with blue cheese dressing
    sliced apples

    It was delicious....the quiche turned out great. Good easy standby
    after a long hard day!

    Shoulder lamb chops, sugar snap peas and tabbouli.
