  1. To my great surprise I found some good looking center cut, bone-in pork
    chops at the market. Seasoned them with s&p and a bit of granulated
    garlic. (Yeah, I know, but it's good and this was meant to be a simple
    meal.) They even had a little fat on them, so I cut it off and tried
    out some fat in the skillet, then browned the chops. Meanwhile, thawed
    some frozen spinach in the microwave and spread it over the chops when
    both sides were browned. First time in a long time I haven't used any
    added liquid with pork chops. Seasoned the spinach with s&p and garlic
    and a hint of nutmeg. Partly covered, cooked about 25 minutes, served
    with plain boiled white potatoes (butter, chopped parsley). Simple
