One of those nights when I decided to wing it with what I had on hand
for dinner. DH was in the mood for Italian Sausage & here's I came up
with...turned out really well, so I thought I'd pass it along.
....sort of a variation on Rigatoni Norcina
5 mild Italian Sausages removed from casings, crumbled and cooked w/o
addl oil (my sausages were quite lean, so I did not drain)
1/2 lb. Ziti, cooked & well drained
To the cooked sausage add:
1C lo-fat milk with one egg well beaten into it
2T unsalted butter
Generous 1/2 C freshly grated Parm Reggiano cheese
Generous 1/2 C cottage cheese
1/2 C chopped fresh Italian Flat Leaf Parsley
Salt and freshly ground pepper
Let the mixture heat through and reduce/thicken slightly, then add well
drained ziti,
toss, letting the pasta absorb the sauce. Serve topped with additional
fresh parsley
and grated cheese.
Made enough to serve 4 generously (DH called dibs on leftovers, the
sign of a successful recipe around here)
