My sweetie, Dave, went fishing yesterday and caught 4 enormous catfish. I've now got catfish fillets coming out of my ears and my cat Tasha has decided that Dave is her favorite person in the entire world (at least until I start cooking the catfish!)
So...dinner tonight is catfish, breaded in seasoned cornmeal, fried. Hush puppies. Salad.
Come to think of it, that'll be dinner for several nights this week!
Keep your fingers crossed for us too...bow season opened a few weeks ago and I'm hoping he gets a deer soon.

I recently ended up with a load of catfish and decided to make a large terrine out of some of it. Whatever didn't get eaten right away got frozen in individual servings.
Good luck this deer season. Hopefully there's some venison sausage in your future.

Catfish is also good in a Thai curry. In fact, there are several *very* good Thai recipes featuring catfish. Google for thai catfish recipe and you just might get inspired.
