I ate the rest of my "Prejudice Pasta" for lunch today ๐ Just went to the
same store and picked up a lump package of Oaxaca cheese (aka Mexican
mozarella), Queso Fresco, a pound of chorizo (the nice firm stuff, not the
mince that dissolves into a puddle of grease) and a package of 10" flour
tortillas. Tonight I'll be preparing quesadillas.
I'm not a fan of salsas, picante sauce or guac but I do have some canned
chopped chillies with diced jalapeno which I may throw in. Also spinach -
spinach & cheese quesadillas are great. Oh, and I have some sour cream.
For Monsur Fromage I *might* even add some sliced button mushrooms! But
don't hold your breath, Alan ๐
This particular trip to the store - which cost me about $10 since I already
had the mushrooms, the spinach, the canned chillies and the sour cream -
will feed me for a week. Creativity without labor intensity. I also
already had corn tortillas in the fridge so I can get a little creative with
those, as well. Should have remembered to pick up some canned enchilada
sauce, but I think I may have some in the pantry. Cheese enchiladas would
be good with these nice cheeses ๐
Since it's a 1 pound round of the queso fresco, I might even try using it
make breaded fried cheese sticks at some point. The description of this
cheese is it "oftens but doesn't melt when heated". I can attest to that.
And it's delicious!
