Thawed 2 tilapia fillets and placed them on a lightly oiled baking pan. I sauteed about 1-1/2 cups of chopped spinach with minced onion and garlic. Seasoned some breadcrumbs with salt and pepper. Topped the fish with the spinach mixture, then the breadcrumbs. Then I sprinkled finely grated cheddar on top of the fillets. Poured a little milk around the fillets to keep them moist and baked at 350F for about 25 minutes; moist on the bottom, crispy-ish on the top. Delicious! I only ate a half of one fillet but hey, leftovers!

That sounds yummy -- and I happened to buy some fresh spinach today.
But how will you reheat your leftovers? I would think fish wouldn't reheat well.

It reheats perfectly well on medium power in the microwave for a couple of minutes. Doesn't over-cook it, just warms it up. You can also do this (covered with foil) in a preheated oven at a very low temp for about 10 minutes.
