  1. I have a friend, a young woman who is a student where I work,
    who was telling me she would like to learn to make bread.
    So I invited her to come to my house for a bread-making
    lesson and a simple dinner.

    On Sat. I made the dinner. Cream of Pistachio Soup
    and for dessert, Pomegranate Ice Cream.

    Nichelle came out about 1pm on Sun. and we started on the
    first batch of bread - One-Rise Tuscan Bread. It's one of
    my favorite recipes but I haven't made it in a while. I
    especially like it for breadsticks.

    With half the dough we made a dozen breadsticks and
    then divided the remainder for 2 small round loaves.
    It turned out well, except that I screwed up. I'm not
    used to having someone in the kitchen with me so I was
    distracted and forgot to cut the slits in the tops of
    the loaves and to spray the bread with water for a nice
    crunchy crust. When I checked on them when they were
    almost done I remembered and sprayed them at the last
    minute. They were still good but would have looked
    better if I had slit the tops and the crust would have
    been a little better if I had sprayed at the beginning.
    Oh, well. Still really good and much better that what
    she is used to.

    After we made the dough for the Tuscan bread we made a
    batch of Irish Oatmeal Bread. My normal recipe just uses
    white flour but I decided to add part whole wheat. These
    loafs were baked in loaf pans. The top is brushed with
    an egg yolk/water mixture before being put in the oven.
    At least I remembered to do it this time.

    Our dinner was very good. The Cream of Pistachio Soup
    was a new recipe and turned out very good. The Pomegranate
    Ice Cream was excellent also.

    I had also tried a new Horchata recipe using mostly rice
    with a few almonds in it. (Previously I have only made
    the almond version.) I decided to make this because
    Nichelle says she like rice milk, so I thought she would
    love horchata. It turned out a little thick with the
    pureed rice pulp. It needed to be strained better. But
    the flavor was good. It had cinnamon and vanilla in it.
    I don't think I'll do the rice version again. The almond
    version is much better.

    All-in-all we had a great time. While we waited for the
    bread doughs to rise I showed her my pictures from my
    vacation to Vermont last fall which I finally could afford
    to have processed just recently.

    I gave Nichelle half the bread to take home to share with
    her family. I've been finishing off the soup and bread
    sticks the last couple of days. I should have made a
    double recipe of the soup as it will be all gone after
    tonight and I really, really like it. Bummer.

    For the bread too!?! I have been psyching myself up to try breadmaking
    myself as it's near impossible to find good bread in Georgia.

    I knew someone would say that. Well, I didn't post it yesterday
    because it's not on my computer at work but at home in a
    recipe file on a 4x6 card. And I forgot to bring it to
    work with me to copy onto the card.

    Here it is.

    CREAM OF PISTACHIO SOUP

    4 slices bacon (I substituted 1 lb. boneless, skinless chicken
    thighs as my guest doesn't eat pork)
    3/4 cup shelled natural, roasted pistachios (I used about 1 cup)
    1 small onion, finely chopped
    1/2 cup chopped celery (I omitted this - I hate cooked celery)
    1 clove garlic, minced (I used 2 cloves)
    1 T. oil
    2 tablespoons dry sherry (I substituted 2-3 T. lemon juice as I
    didn't have dry Sherry)
    6 cups regular-strength chicken broth (I used 3 cans Campbell's
    Condensed Chicken Broth plus 3 cans water)
    1/4 cup long-grain white rice
    2 parsley sprigs, chopped
    1 small bay leaf
    pepper to taste
    1 cup whipping cream

    Rub off as much of the pistachio skins as possible, set nuts
    aside. Fry bacon until crisp and crumble and reserve. (I
    bake the thighs with some butter and then cooled them and
    diced them, saving all the pan juices to add to the pot.)
    In the bacon fat (in my case, the juices from the chicken)
    in a 4- to 5-quart pan over medium heat, cook the onion,
    celery, and garlic until onion is very limp but not brown,
    about 10 minutes, stirring often. Add sherry (or lemon juice),
    broth, rice, bacon bits (or chicken), parsley, bay leaf, and
    pepper. Bring to a boil, then reduce heat, cover, and simmer
    until rice is tender to bite, about 25 minutes. Meanwhile
    rinse salt off the pistachios in a mesh strainer and pat dry.
    Stir fry in oil until lightly browned. Remove about ¼ cup of
    the nuts and finely chop for garnish. Pure the remaining nuts
    with some of the broth from the soup. Add to pot. Discard
    bay leaf. Add cream to soup and stir over medium-low heat
    until hot, 5-7 minutes. Garnish servings with the remaining
    pistachios. (Notes: I don't think I would use the Sherry
    even if I did have it as I don't think I would like the
    flavor in this all that much. Lemon was perfect and gave
    it a brightness. Will make it again some time using the
    bacon as I really missed it this time although the chicken
    was great. I would cook it for less time to keep the rice
    from being over-cooked. I think 15 minutes would be plenty
    since it is reheated for another 5-10 minutes once the nuts
    and cream are added. Actually the cooking time was fine for
    the original instruction which called for pureeing the entire
    soup - they did not add the crumbled bacon until the end.
    I thought it would be better with the rice left whole.)

    Ah, well, as I replied to Mr. Cheese, I have the recipes
    on card in a file at home and didn't remember to bring
    them in with me. And I didn't think anyone would ask
    for the bread recipes anyway so today I only brought
    the soup recipe. I'll try to remember to bring the
    bread recipes tomorrow and type them in.
