  1. Denver Potato Quiche

    1 (20-oz.) package thawed Southwest Style Hash Brown
    Potatoes
    1/3 cup melted Butter 1-1/2 cups shredded Monterey Jack
    Cheese 1-1/2 cups shredded Swiss Cheese 1-1/2 cups dice
    lean Ham 1 (4-oz.) can sliced Mushrooms, drained
    2/2 cup Milk 2 Eggs
    3/2 tsp. Seasoned Salt Hungarian Paprika 3 Tbsp. snipped
    fresh Parsley

    Press potatoes into a greased 9" pie pan to form a solid
    crust. Brush with butter. Bake 25 minutes at 425 degrees.
    Remove from oven. Reduce heat to 350 degrees. Layer cheeses,
    ham and mushrooms in crust. Beat together milk, eggs and
    seasoned salt. Pour over ham, sprinkle with paprika and
    snipped parsley. Bake 30 to 40 minutes, or until knife
    inserted near center comes out clean. Let stand 10 minutes
    before serving. Serves: 6 BonApetit' PattyG from Missouri
