I would like to know how to make a dense whole wheat bread
in my breadmachine? My local bakery makes a delicious
bread with whole wheat, raisins and nuts. They use a
variety of grains which are not ground up. Does anyone
have a recipe like this? Hand-made recipes will also be
appreciated. Thanks
Kristina wanted to know how to make a dense wholewheat
bread. The trick is making it not dense, I get lots of dense
bread when trying to make it light! :-)
Assuming a bread machine, the basic recipe is dependent on
your machine. My basic recipe:
Wholegrain Bread
2.5 Tbsp yeast (or 1 envelope) 1 pat butter 1 tsp
diastatic bread malt 12 oz. warm water (not more than
120 degrees F.)
3.5 cups whole wheat flour (I grind my own fresh. I find
fresh is really significantly better than stale. 1 cup
flour from other grains (corn, rye, oat) I don't like rice
flour (YMMV). 2 Tbsp sugar 1 tsp salt Millet (whole) an
oz. of millet is nice. (Option) Seeds: I like 3 - 4
heaping Tablespoons of caraway and/or sesame. 2 Tbsp
honey, more sugar or (molasses makes it dark)(optional)
I put the yeast, butter, malt, and a few oz. of the warm
water into the bread machine. Let it sit and brew while
grinding the grain. Measure out all dry stuff in a separate
bowl, mix. (If you put any wet stuff in the bowl, it is
harder to clean.) Mix dry stuff and once yeast is foaming,
add dry stuff to bread machine, then seeds etc. honey or
other liquids. If you're going to use raisins, use optional
honey or molasses. Set and start machine. Check consistency.
Add water to proper consistency (varies with batch).
