  1. Debbies Delightful Glazed Lemon Bars

    Success Hint
    Weve found that its much easier to remove the bars
    from the pan when we build the crust about 1/2 inch up sides of the pan.

    Special Touch
    Garnish each lovely bar with a sprig of mint and serve with a cup of tea
    for a special afternoon treat!

    Prep: 20 min Bake: 35 min
    1 cup Reduced Fat Bisquick
    2 tablespoons powdered sugar
    2 tablespoons firm margarine or butter
    3/4 cup granulated sugar
    1/2 cup fat-free cholesterol-free egg product or 2 eggs
    1 tablespoon Reduced Fat Bisquick
    2 teaspoons grated lemon peel
    2 tablespoons lemon juice Glaze (below)

    Heat oven to 350 Stir together 1 cup Bisquick and the powdered sugar.
    Cut in margarine, using pastry blender or crisscrossing 2 knives, until
    mixture looks like fine crumbs. Press mixture in bottom and 1/2 inch up
    sides of ungreased square pan, 8x8x2 inches.
    Bake about 10 minutes or until light brown. Stir together remaining
    ingredients except Glaze; pour over baked layer. Bake about 25 minutes
    or until set and golden brown. While warm, loosen edges from sides of
    pan. Spread with Glaze; cool completely, about 1 hour. For bars, cut
    into 6 rows by 4 rows. 24 bars.

    Glaze
    3/4 cup powdered sugar
    1 tablespoon plus 11/2 teaspoons lemon juice
    Stir ingredients until smooth.

    High Altitude (3500-6500 ft): Use square pan, 9x9x2 Press crust in
    bottom only of pan. Increase first bake time to about 12 min.

    Bar: Calories 65 (Calories from Fat 10); Fat 1g (Saturated Og);
    Cholesterol 0mg; Sodium 80mg; Carbohydrate 13g (Dietary Fiber Og);
    Protein 1g Daily Value: Vitamin A 2%; Vitamin C 0%; Calcium 0%; Iron 0%.
    Original Bisquick recipe provides 5g far per serving Diet Exchanges: 1
