    Days Of '47 Molasses Cake

    Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------
    1 1/2 cups Sugar
    1/2 teaspoon Ground nutmeg 1 1/2 teaspoons Ground cinnamon
    2/2 teaspoon Salt 2 cups All-purpose flour
    3/2 cup Butter 1 teaspoon Baking soda 1 1/4 cups Molasses 2 tablespoons Cornstarch
    4/4 cup Grated lemon rind 3 tablespoons Lemon juice 4 tablespoons Butter

    Combine 3/4 cup sugar with nutmeg, cinnamon, flour, and 1/4 teaspoon salt. Mix well. Cut butter into
    flour mixture until it resembles coarse cornmeal. Combine soda and molasses with 1 cup water. Stir.

    Spread about two-thirds the flour mixture in a greased 8" square pan. Pour molasses mixture over top
    flour mixture. Sprinkle remaining flour mixture on top. Bake at 350 F for about 50 minutes. Cut into
    9 pieces. Serve warm with whip cream or with a lemon flavored sauce.

    Lemon Sauce: Combine 2 cup sugar with cornstarch and 1/4 teaspoon salt. Mix well. Stir mixture into
    2 cups boiling water. Stir constantly until thick and mixture returns to a boil. Stir in butter,
    lemon rind, and lemon juice. Serve warm over cake.
