Cranberry-Orange Bread

16 ounces frozen bread dough -- thawed
1/2 cup orange juice
1/2 cup cranberries -- chopped
1/2 cup golden raisins
1/4 cup walnuts -- chopped fine
1/2 cup brown sugar, packed
1/2 teaspoon cinnamon
1 tablespoon cornstarch
1 tablespoon water
vegetable cooking spray
1 cup powdered sugar -- sifted
2 tablespoons orange juice
In a small saucepan put 1/2 cup of orange juice, cranberries, raisins,
walnuts, brown sugar and cinnamon. Heat to boiling. Mix cornstarch with
water and add to cranberry mixture. Reduce heat and simmer for 10 minutes
until cranberries start to soften. Let cool. Roll bread into a 9x12 inch
rectangle. Spread cooled cranberry mixture onto bread dough. Spread evenly
to the edges. Roll bread up from short side. Spray a bread pan with
vegetable spray. Place bread seam side down into the pan. Cover and let
rise in a warm place until doubled in size. Bake bread for 35 minutes in a
350 F oven or until browned on top. Remove from pan and put on a rack to
cool. Mix powdered sugar with enough orange juice to moisten into
spreadable consistency. Spread on warm bread.
