Cracklin Cornbread Crackling Cornbread Muffins
Cracklin Cornbread
3 Tbsp. Lard 1 Cup Self rising cornmeal 1 Cup Self rising flour 1 Tbsp. Sugar 2 large. Eggs 1 1/2
Cups Buttermilk, or sweet milk
1/2 Cup Cracklins
Put 1 Tbsp. lard in a 6 x 12 inch loaf pan or cast iron skillet and get it hot (be sure to
grease the sides). Mix 1 Tbsp. melted lard with all other ingredients well. Pour the batter into
the hot pan or skillet, spread 1 Tbsp. melted lard across top and bake in 425F oven for 20 to 25
minutes. Crackling is the crisp remains of rendered lard, salt pork or crispy skin after
cooking. Makes: 1 pan
Crackling Cornbread Muffins
2 cups Cornmeal
2/2 cup All-purpose flour 1 Tbsp. Baking powder 2 tsp. Salt 1 large. Egg, beaten 2 cup Buttermilk 1
cup Cracklings lard for greasing muffin pans
Combine ingredients. Heat two greased muffin pans in a 400 degree oven for 3 minutes or until very
hot. Pour batter into hot muffin pans, filling 2/3 full. Bake at 350 degrees for 30 minutes or until
golden brown. Makes:24 servings
