  1. Oop's I goofed and am sending corrected recipe. I think my thumb got in
    the way of my typing when I copied it to my computer files from my
    hand written recipes.

    Here is one that I have, good for a small serving. It can be nicely
    presented on a plate for each guest.

    I hear of people using muffin tins to cook their meatloaf.
    It is supposed to cook the meatloaf quicker + it gives individual
    portions and crispy tops. Iam looking for a meatloaf recipe to cook
    them in muffin tins instead of a loaf

    Muffin Tin Meat Loaf

    2 large eggs
    1 pound ground beef
    1 cup bread crumbs
    1/2 cup milk
    1/2 can tomato soup

    Mix well. Heap into sprayed muffin tins. Bake until no longer pink in
    the center, about 30 to 40 minutes. Heat hot tomato with a few chopped
    onions, if you wish.Top meat muffins with tomato and onion sauce and
    serve.
