  1. Somebody posted this for me in another group:

    2 cups corn meal
    1 teaspoon salt
    2 cups boiling water
    1 tbsp maple syrup (optional)
    fat for frying

    Mix corn meal and salt together. Stir in enough boiling water to make a
    stiff dough. Add maple syrup, if you have it. Heat enough fat in your pan
    to cover bottom by about 1/2 inch. Shape the dough into small, round cakes
    and drop into sizzling fat. Cook each side until brown and crispy. Serve
    hot.

    I cut the recipe in half and it made 4 3" cakes. Very filling - I ate two
    and saved the rest for later. Had them with peanut butter for extra
    protein. Might be good to add some corn kernels. I used vegetable oil for
    the "fat".
