    Texas State Fair Corn Dogs

    3 cup corn meal
    1 cup all-purpose flour
    2 tablespoons sugar
    1 1/2 teaspoons baking powder
    1 teaspoon salt
    2 tablespoons lard -- melted
    3/4 cup milk -- room temperature
    1 egg -- slightly beaten
    15 hot dogs
    lard -- for deep-frying

    Place hot dogs in boiling water while mixing the batter. Combine corn
    meal, flour, sugar, baking powder, salt, grease, milk and egg: Mix well (
    almost the consistency of cornbread ) and let set. Put a wooden skewer in
    the end of each hot dog and dip in batter, let excess run off. Deep fry at
    360 F, keeping the dogs submerged in hot grease 4-5 minutes until golden
    brown.

    NOTES : Variation: For A Little Texas Heat Add 1 tsp. cayenne pepper to
    the batter mix. or Add 2 Habanero peppers (finely chopped) to batter mix

    1 cup yellow cornmeal
    1 teaspoon salt
    2 tablespoons honey
    1 cup boiling water
    1 egg -- beaten
    1/2 cup milk
    2 tablespoons butter -- melted
    1/2 cup all-purpose flour
    2 teaspoons double-acting baking powder
    1 package hot dogs
    10 bamboo skewers -- soaked in water

    Heat oil to 350 degrees In a bowl, combine cornmeal, salt, honey and
    boiling water Mix. In a separate bowl, beat together egg, milk and
    butter. Add egg mixture to cornmeal mixture. Sift together flour and
    baking powder, then incorporate it into the mix until smooth.
    Insert stick into hot dogs, dip in batter, and place in a preheated
    fryer until golden brown, approximately 8 - 10 minutes Drain, and serve

    1 egg -- lightly beaten
    2 tablespoons vegetable oil
    8 hot dogs
    vegetable oil -- for deep-frying

    In medium bowl, combine flour, corn meal, sugar, baking powder and
    salt; mix well. Add milk, mustard, egg and 2 tablespoons vegetable oil.
    Stir just until dry ingredients are moistened; set aside. Meanwhile, in
    deep-fat fryer or Dutch oven, heat 2" oil to 375F. Pat hot dogs dry with
    paper towel; dip into batter after inserting skewer into each hot dog. Fry
    until golden brown, 1 - 2 mins. Drain on paper towels.
