cooking tofu

  1. I really like tofu, but I have had no luck preparing it in
    any way other than gently simmering it in a sauce (curries
    etc...). I have tried slicing it and then pressing the
    liquid out prior to putting it in a marinade...with less
    than wonderful results. It wasn't bad, but it certainly
    wasn't anything to get excited about. Are there any
    particular marinades that you all like for this application?
    Or should I try a different method of preparation?

    p.s. tried something tasty last night - liberally
    sprinkling Penzey's shallot pepper over freshly popped
    popcorn. Yum!

    I like pan frying it on both sides until crispy, then
    adding it to stir fries. This recipe is also a favorite
    in our house:

    Ma Po Tofu

    1 lb. ground pork 1 Tbsp. oyster sauce
    1/2 tsp. sesame oil 2 tsp. soy sauce 2 Tbsp. sherry 1 tsp.
    garlic powder ( can also use 1 Tbsp. fresh minced garlic)
    black pepper

    2 Tbsp. peanut oil
    2/4 tsp. red pepper flakes 4 thin slices of ginger 2 Tbsp.
    oyster sauce 1 Tbsp. soy sauce 1 14-16 oz. cake tofu, cut
    into 1 inch cubes (I prefer Hinochi brand, the silken/soft
    variety) 2 Tbsp. chili garlic sauce (optional) 3
    scallions, minced

    Mix ground pork, oyster sauce, sesame oil, soy sauce, sherry
    and garlic powder. Let stand 10 minutes or more.

    In a large skillet, heat oil and add red pepper flakes and
    ginger, saute 2-3 minutes. Remove ginger slices. Add ground
    pork mixture and brown until cooked through. Add tofu. Add
    oyster sauce, soy sauce, chili garlic sauce and adjust
    seasonings to taste. Simmer 5-10 minutes. Stir in minced
    scallions just before serving, and eat with steamed rice.

    Notes: Amounts of stuff like oyster sauce, soy sauce, sesame
    oil, chili sauce etc. are approximate, you can add more or
    less according to your tastes.

    p.s. tried something tasty last night - liberally

    Here's an easy way to change the texture, make it a bit
    firmer. Simply freeze it. Slice firm tofu and set it in the
    freezer on a cutting board - do not cover. Once it is frozen
    thru you can bag it for long term freezing or use it
    immediately. Thaw in hot water and use as usual. I like to
    press the water out of it after thawing.
