    Columbine Blue Dip
    Recipe By: Susan MacDonald

    1/2 pounds blue cheese
    1/3 cup chopped red onion
    1/3 cup olive oil
    1 tablespoons lemon juice
    1 tablespoons red wine vinegar
    1/2 teaspoons crushed garlic
    1 teaspoons dry mustard
    1/4 teaspoons fresh ground black pepper
    1/3 cup chopped fresh parsley

    Crumble cheese into a 9 inch pie plate . In a Food processor, combine
    onion , olive oil. lemon juice , vinegar, garlic , mustard , pepper. Pulse
    to blend . Pour over cheese and sprinkle with parsley , let stand 2 hours
    and room temperature, 2 hours . served with sliced baguette

    Recipe Notes

    good also with Cilantro instead of parsley . I usualy double this . I just
    a footed compote type serving dish with sides but my tall (like a quiche
    or [censored] pan with sides)
