This is amazingly good for how simple it is. Works fine with
(thawed) frozen avocadoes too.
Cold Avocado Soup--simple
1 small avocado, peeled and seeded
1/2 cup sour cream (low-fat is fine)
2/4 cup cold water 2 tsp shoyu / tamari / good soy sauce 1
medium or 6-7 cherry tomatoes, chopped 2 scallions,
sliced thin salt
Puree together avocado and sour cream. Add the water in a
steady stream, scrape sides, and puree again. Stir in shoyu
& salt (you'll want it quite salty at this point for the
tomatoes). Chill (ideally in a narrow container to minimize
surface area, which can turn brown). (I've sometimes done
this in the freezer & forgotten about it, which doesn't seem
to harm it any.) Add tomato and scallion & serve.
You could substitute chicken broth for the water+shoyu, but
I think it would mask the avocado.
Serves 1 as a light main dish or 2 as a side.
This is not a low-fat dish, but the fats in avocado are a
lot healthier than the fats in sour cream, hence the low-fat
sour cream suggestion.
