If your a French roast lover- get a decent decaf bean and try reroastiong it- You wouldnt want to go through the trouble all the time, but its different, and wont keep you up at night. Also- the French roasts have slightly less caffeine.
there is a newsgroup on roasting- it gets extreme for the average guy, but you will learn more than you ever wanted to know.
I drink a lot less coffee now that I'm taking better care of myself- the day starts out with my vitamins- 2 large glasses of water THEN coffee. after the water, 2 cups is plenty.
