  1. ...I found this thing someone gave me years ago; it came
    from an Infomercial and is called the "Fat Free Express
    Stovetop Oven". It's a large lidded uh - pan? Skillet? Oven?
    It has a rack inside and vents in the lid. The instructions
    say you have to condition it like an iron skillet first with
    some oil, but it's a non-stick pan. I've never used it but I
    was flipping through the recipe booklet and ran across this
    sort of interesting OB food recipe. This has to be the
    biggest not really an omelet I've [never] seen. Maybe before
    I send this thing the way of the AmVets I'll use it.

    Tex-Mex Breakfast Omelet

    6 large eggs
    3/4 c. milk
    4/2 tsp. salt 1 lb. spicy bulk breakfast sausage 1 medium
    onion, chopped
    5/2 green bell pepper, seeded and chopped 1 c. chunky
    salsa 4 c. frozen hash brown potatoes 1-1/2 c. finely
    shredded cheddar

    In a large bowl, whisk together the eggs, milk and salt.
    Set aside.

    Brown the sausage, onion and bell pepper in the stovetop
    oven over medium-high heat until the sausage is no longer
    pink. [Okay, it doesn't say to drain the sausage - what's
    the fat free part of this thing again? Oh, right, you don't
    *add* butter, lard or oil to it. Drain the sausage!] Add the
    salsa and reduce the temp to medium-low. Top the sausage
    mixture with half the potatoes. Cover well with cheese and
    the remaining potatoes. Pour the egg mixture over all. Cover
    with the vent half closed. Cook 20-25 minutes until the
    center is set. Let stand 10 minutes. Invert onto a large
    serving dish and cut into wedges. Serves 6-8.
