Christine Cushing - soft rolls

    I'm watching Christine Cushing who is making soft rolls. The recipe
    doesn't look bad at all so I'll give it a try in the breadmaker on the
    dough setting. The recipe is available on foodtv.com using search /soft
    rolls/. I just can't figure out why she kneaded it the way she did.
    I've never seen bread dough picked up then tossed down that way and I've
    made a lot of dough by hand & with the breadmaker. If you toss it the
    way she did there would be flour all over the kitchen. That's not a
    good thing when you have to clean your own kitchen!

    There is a Julia Child guest - perhaps 'Groveman' - who when making bread
    SLAMS it down on the table top to knead it quite a number of times. I
    would think the method would be hard on old weak arms, not to mention as you
    did, cleaning up the floor flour. I go skidding around on my floor with
    just a small amount of flour on my adidda slides.

  3. You don't have to use a lot of flour to knead your bread; in fact, one
    of my bread books (can't remember which one now) suggests kneading your
    dough with water to get a feel for how to deal with a sticky bread dough
    without adding too much flour.

    Oh, and I checked foodtv.com for the recipe and couldn't find it ...
    maybe I did something wrong or the recipe has been removed?
