I don't know if this is what you want but it makes a great cheesecake
Name: Chocolate Turtle Cheesecake
Serves: 12

2 cups vanilla wafer crumbs
6 Tbsp unsalted butter, melted
1 14 oz. bag caramels
1 5 oz. can evaporated milk
1 cup chopped toasted pecans
2 8 oz. packages cream cheese
1/2 cup sugar
1 tsp vanilla
2 eggs
1/2 cup chocolate chips, melted
Combine crumbs and butter. Press into bottom of 9 inch
spring form pan. Bake at 350 for 10 min. In small pan, over low heat,
melt caramels with milk, stirring until smooth. Pour over baked crust
and top with toasted pecans. In bowl of electric mixer combine cream
cheese, sugar, and vanilla, mixing at medium speed until well blended.
Add eggs, one at a time, beating well after each addition. Blend in
melted chocolate. Mix well. Pour over pecans .Return to oven and
continue to bake at 350 degrees for 40 min.. Loosen cake from rim of pan
(run a knife around edge.) cool thoroughly before removing rim of pan.
Chill well before serving.
