  1. This recipe calls for mini chocolate chips, but I see no reason why they
    can't
    be omitted: these are very chocolaty and moist and easy to prepare.

    Chocolate Muffins

    1 package chocolate fudge cake mix 1 small package chocolate Instant pudding mix
    3/4 cup water 4 large eggs, beaten
    4/2 cup vegetable oil 1 cup mini chocolate chips, frozen - Optional
    5/4 tsp. almond extract

    Mix cake mix, pudding, water, eggs, and extract with a mixer until smooth. If using, stir in the
    chocolate chips and blend in thoroughly. Spray muffin tins with Pam or grease each one. Fill the
    tins about 3/4 full. Bake at 350: for about 20 minutes or until a pick inserted in the center comes
    out clean. DO NOT OVERBAKE. These also freeze well. Jan
