  1. Chinese Veggie Soup
    Servings 4

    2 vegetable bouillon cubes
    3 cups hot water
    1/2 tsp five spice powder
    2 Tbsp light soy sauce
    2 tsp ground coriander
    2 cups mixed fresh vegetables, shredded
    1 tsp table salt
    1 tsp ground black pepper

    Put the bouillon cubes into a sauce pan with the 3 cups of hot water.
    Add the Chinese five spice powder and bring up to the boil. Add the soy sauce,
    coriander and vegetables. Simmer for 5 minutes. Check the seasoning, adding
    salt and pepper to taste. Serve at once in warmed bowls. Serves 2 large
    portions or 4 small portions
