  1. Chili Cheese Steaks

    4 Tbsp all purpose flour
    3 tsp salt
    3 tsp chili powder
    1/3 tsp pepper
    2 pounds cubed steak, cut into strips
    1/4 cup shortening
    2 cups chopped onions
    1 (16 ozs) can tomatoes
    1 cup shredded sharp cheddar cheese

    About 2 hours before serving: Preheat oven to 350 F. In a bowl, combine
    flour, salt, chili powder and pepper. Heat shortening in a skillet over
    medium-high heat. Dredge pieces of steak in the flour mixture and brown in
    the heated shortening. Remove browned meat to a plate. In the drippings,
    cook the onions until browned; stir in remaining flour mixture. In a
    large, shallow casserole, spoon the onion mixture. Arrange steak strips on
    top of the onions, then top with tomatoes and their liquid. Cover and bake
    1 1/2 hours or until meat is fork-tender. Sprinkle with shredded cheese.
    Heat 5 minutes more or until cheese is melted.
