  1. Chicken With Glaze

    2 whole chicken breasts
    1 orange, quartered
    1 onion, quartered
    Salt & pepper to taste
    2 tsp. dried rosemary
    1/2 c. water

    Glaze:
    3 Tbsp. butter
    3 Tbsp. grainy mustard
    3 Tbsp. Grand Marnier
    3 Tbsp. honey
    5-6 dried apricots, cut into sm. pieces (or jam may be substituted)

    Preheat oven to 400 degrees. Rinse the chicken breasts and pat
    dry. Squeeze the oranges over the chicken. Place the oranges and
    onions
    in the cavity of the chicken and place breast side up in a roasting
    pan.
    Sprinkle salt and pepper if desired on the chicken and the rosemary. Add
    the water to the pan. Cook the chicken at 400 degrees for 20 minutes.
    Prepare the glaze by heating the ingredients EXCEPT the Grand Marnier
    until hot and smooth. Remove from heat and add the Grand Marnier.
    Spoon the glaze over the chicken. Reduce the heat to 350 degrees and
    continue cooking until the meat is tender, about 45 minutes.
