Chicken with Garbanzos
Makes 4 servings

2 cups water
1 cup long grain white rice
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts
1 can (1 pound) garbanzo beans
11/4 cups picante sauce or salsa, mild or medium spicy to taste
Bring water to a boil, stir in rice. Immediately after rice returns to a
boil, reduce heat to low simmer, cover and cook 15 minutes. Fluff with
fork, cover and keep warm until serving time. Remove all visible fat from
chicken and cut into 1-inch cubes. Heat a large, heavy nonstick skillet;
add olive oil and heat just to shimmering. Stir in chicken cubes and saute
over medium heat about 4 minutes, or until lightly cooked on all sides.
Meanwhile, drain garbanzos in a strainer, rinse with cold running water
and drain well. Add to chicken. Stir in sauce or salsa and simmer until
chicken is done and beans are heated through, about 4-5 more minutes.
Serve immediately over rice.
