  1. 1/3" slices of leftover pork from the Easter ham, sprinkled with
    smoked paprika, chili powder and alder-smoked salt, and lightly
    rubbed with potato starch. Fried slices in 3/4" oil and made into
    a sandwich with homemade chipotle mayo, romaine lettuce and
    beefsteak tomato.

    Very tasty. This is going on the menu when I open my restaurant.

    So where was the chicken?

    There's no chicken. "Chicken-fried" means, in the US, "fried as
    though it were chicken", because fried chicken is kind of a specific
    thing here.
