Chicken A La Orange
Enough chicken breasts to serve your guests, this makes enough for 16 chicken breasts.
Egg Dip: Beat 2 - 3 eggs depending on how many chicken breasts you are using
Flour Dip: In shallow bowl mix; 1 cup flour 1 tsp. salt
1/2 tsp. pepper 1 tsp. paprika
Orange Syrup:
2/2 cup brown sugar 1 cup white sugar 1 cup water 1 tin frozen orange juice, undiluted
3/4 cup lemon juice
Mix together brown sugar, white sugar & water. Microwave on high for 2 minutes. Stir. Microwave on
high again for 2 minutes. Stir & add orange juice and lemon juice. Dip chicken 1st in egg mixture
then in flour mixture being sure to coat all sides. Then gently fry in frying pan with equal amounts
of oil & margarine (or Butter); till lightly browned. Place in roasting pan. Pour orange syrup over
top only use enough syrup to come
4/2 way up the side of the chicken breast. Bake in a 350F oven for 45 to 1 hour 15 min. (until
juices run clear) Depends on how much chicken you have & how closely they are stacked.
This recipe can be mass produced for large gatherings like weddings. Just increase the amount of
syrup and the baking times proportionately.
