  1. Cheesecake Ribbon Brownies

    There really isn't any real ribbon in these brownies, but
    the cream cheese kind of ribbons it's way through
    them.hence the name!

    1 1/3 cup melted butter 2 1/2 cups granulated sugar
    2/3 cups powdered sugar 5 eggs 1 1/3 cups flour
    3/4 cup cocoa 8 ounces softened cream cheese 1 tsp.
    vanilla extract

    Melt butter over low heat, Do not let it bubble. Mix 2 cups
    sugar and cocoa in a large mixing bowl. Add melted butter
    and stir until completely mixed. Add 4 eggs and mix
    thoroughly. Add flour and chocolate chips into brownie
    mixture. Don't over mix! Pour batter into a 9X13 inch
    greased baking pan. Combine cream cheese, 1 egg 1/2 cup
    sugar and vanilla in another bowl and beat until smooth.
    Fold into batter in a ribbon pattern. (Oh go ahead, get
    creative!) Bake at 350 degrees for 25 to 30 minutes. Makes
    12 large or 20 small brownies. Store in the fridge.

    Types of Chocolate

    Like coffee, different countries produce different tasting
    chocolate. Mexican chocolate has cinnamon added. European
    milk chocolate is vastly different from that produced in the
    US. Even English chocolate versus that produced in Belgium
    are quite different. Flavors also differ from company to
    company. It depends on their super-secret recipes, ya know!
    That's why you have to sample different kinds of chocolate
    from different companies.

    Cocoa Chocolate liquor with the cocoa butter having been
    removed, is called cocoa - a fine bitter tasting powder.
    (Technically, "chocolate" must contain both the chocolate
    liquor and the cocoa butter. If the cocoa butter has been
    removed and replaced with vegetable oil the result is, by
    definition, not chocolate. The higher the cocoa butter
    content in chocolate the better it is considered to be.)

    Dutch Process Cocoa A special process used to neutralize the
    natural acids in cocoa powder. It has a much different taste
    than regular cocoa powder.
