  1. Cheese Topped Fish Filets

    Preheat oven to 400 degrees. A savory Cheddar cheese and
    vegetable sauce bakes atop fish fillet in this easy-to-make
    dinner entree. You can choose from a number of white-fleshed
    fish: sole, lingcod, halibut, perch or flounder.

    2 lb. fish filets
    1/4 lb. mushrooms, sliced
    2 Tbsp. minced green onion (tops included)
    1 medium tomato, peeled, seeded, chopped
    4 oz. shredded Cheddar cheese
    1 Tbsp. butter
    3/4 tsp. salt
    1/4 tsp. pepper
    1/2 tsp. dry basil
    1 egg

    Lightly grease a shallow 2 quart casserole or 7 x 11-inch baking dish and
    arrange fish in an even layer. Bake, uncovered, for 10 minutes. While fish
    is baking, melt butter in a wide fishing pan over medium heat; add
    mushrooms and onion and cook until most of liquid has evaporated. Remove
    from heat and stir in salt, pepper, basil, tomato, cheese and egg. Remove
    fish from oven and reduce temperature to 350 degrees. Spoon onion mixture
    evenly over filets. Return to oven and bake, uncovered, for 20 minutes or
    until fish flakes easily when prodded in thickest portion with a fork.
    Serves 6. Happy Eating!
