  1. Helen's Cheese Souffle

    Serving Size: 4
    Categories: Eggs, Edit

    1/4 cup Flour
    1/4 cup Margarine
    1 cup Milk
    1 d Cayenne
    4 Eggs ; separated
    1/2 tsp Salt
    1/2 lb Old cheddar
    1 pn Cream of tartar

    Make sauce with butter, flour and milk. Blend in cheese. Separate eggs and
    beat yolks until thick and lemon coloured. Pour a little sauce into yolks
    and whisk. Return to sauce. Beat egg whites with cream of tartar til stiff
    but not dry. Fold sauce into egg whites. Pour into ungreased 1 1/2 qt
    casserole or baking dish. For Top hat, run a knife around the outer edge
    of mix to make a circle. Bake at 300 F for 1-1/4 hours. H. Peagram
