    8 ounces light cheddar cheese, grated (we like Cracker Barrel Extra Sharp

    Preheat oven to 400 . Place all ingredients, except dried cranberries, in

    in cranberries. Form into 1-inch balls and set aside.

    Coating:
    1 large egg white
    2 teaspoons water
    1/2 cup all-purpose flour
    1-1/4 cups roasted, salted pepitas (pumpkin seeds with shells removed),
    ground in a food processor

    In a small bowl, whisk together egg white and water. Put flour and ground
    pepitas in two other separate bowls. Dip each cheese ball into flour, then
    egg mixture, then ground pepitas. Place on a nonstick baking sheet and
    bake 12 minutes.

    Yield: about 25 balls

    Per ball: 116 calories, 7 g fat, 2 g saturated fat, 15 mg cholesterol, 7 g
    protein, 6 g carbohydrate, 1 g fiber, 196 mg sodium
