So, Ive been looking at picking up another set of wheels for race day. My current wheel has a Shimano 105 cassette on it. If I were to buy an Ultegra cassette and put it on my race wheels, will I be able to change out wheels on race day with no adjustments? Im going to keep the same gearing, 12-25 on both. Also, both will be 9 speed.

Most of the time you can switch wheels without readjusting the RD.Sometimes you can't.

You're more likeley to have adjustment issues with the brakes than the RD in my experience due to different rim shapes and braking surfaces. Not a big problem but something you'd have to take care of ahead of time.
Ultegra and 105 cassette spacing is the same so that's not an issue but the cassettes might be in slightly different positions relative to the derailleur depending on your hubs.

Yeah, that's what happens when variations all tend to add up the wrong way.
