  1. Carrot Cake

    This is hands-down the best carrot cake you will ever eat!

    2 cup sugar
    1 1/2 cup vegetable oil
    4 eggs
    2 cup flour, sifted
    2 t baking soda
    1 t salt
    2 t cinnamon
    1 8oz. can crushed pineapple, drained
    1 cup chopped walnuts
    1 t vanilla
    2 cup grated carrots

    Beat the sugar oil and eggs together in a mixing bowl. Add the dry
    ingredients and mix well. Add in the pineapple, walnuts, vanilla, and
    carrots. Stir until well blended. Bake at 350* for 35-40 min if you use
    three 8" round pans that have been greased and floured. If you used a
    greased and floured 9"x13" cake pan, you will need to extend the baking
    time.

    Cream Cheese Frosting

    1 box powdered sugar
    1 8oz. package cream cheese
    1 t vanilla
    1/2 cup butter

    Mix all together until smooth and creamy. You may need to add a tiny bit
    of milk or cream to get the consistency right. Spread on cooled cake.
