If I wish to turn my triple set up to a double (ie 53-39) am I correct in
saying I dont have to change leavers of derailluer?

Yes correct. A long or mid cage rear will work fine with a double and
the front der does the 30-42-52 shift, with adjusting limit screwes, it
will do the 53/39 w/o problem.
