Bubbie's Favorite Eggs Benedict
purchased from Bowers Estate in Fort
Worth, Texas . Dated 1951.
4 English muffins
8 slices Canadian bacon
8 eggs
2 avocados
1-cup mayonnaise
2 tablespoons lime juice
Hot sauce to taste
Toast English muffins. Place 2 halves on each plate. Lightly saute
bacon and top each muffin half with a slice. Poach eggs and top
each slice of bacon with 1 egg. Mash avocados then whip in
mayonnaise, limejuice, and hot sauce with a wire whisk until smooth.
Pour over eggs Benedict.
