  1. Hi all,

    This is my mom's recipe so I can not take claim... but it is
    pretty good for weekend company, as you can make before and
    keep in the fridge until your guests awake. We have it every
    Xmas, while the kids are opening presents...It is great!

    Brunch Souffle - Serves 8-10

    1 lb. mild pork sausage or Italian Sweet sausage 6-8 Large
    Eggs 2 cups milk 1 teaspoon salt 1 Tablespoon Dry mustard
    (can sub regular if not dry) 6-8 Slices Sourdough or Italian
    bread (1" cubed) 1 cup grated cheddar cheese

    Prep:

    Brown sausage; drain and cool. Crumble or slice into bowl.

    In another bowl, beat eggs, then add milk, salt, mustard and
    bread cubes. Mix well.

    Add sausage and cheese.Again, mix well.

    Spoon into a 12"x8"x2" greased baking dish. Cover and
    refrigerate overnight.

    When you want to serve, bake uncovered in a 350 degree oven
    for 45-60 minutes, or until the egg mixture is set, and you
    have a nicely browned top. Cut into squares and dish up!

    What's nice about this is you can prepare the night before,
    and have time to spend with your guests instead of working
    the kitchen in the morning.
