Brunch omelet

  1. We had omelets for brunch today. That's it, just one measly omelet.
    We need to go grocery shopping this afternoon so this will have to
    hold us over.

    For me I have to get rid of the egg snot aka:chalaza

    Move the eggs around a little to set up

    Add fillings. I added maple flavored sausage, cheddar cheese, tomatoes

    You think that's bad? My husband's brekkie/brunch. Smoked pulled pork
    picnic on cornmeal pancakes with BBQ sauce. Dinner tonight will be smoked
    pork enchiladas.

    Never a dull moment huh kili. ;-)

    I could go for the enchiladas, how are you going to do them?

    If I ate like him I'd weigh 300 lbs and have a cholesterol level the
    same.

    My husband is a trip. He comes off as a friggin' jerk, but in reality he's
    really not. But no, never a dull moment with him. :~)

    For the enchiladas.....I'm not making my own sauce; I'm cheating. BUT, I
    will loosen up the corn tortillas in corn oil so that they roll easily, and
    fill them with a mixture of pulled pork, sauteed onions, chilis, jalepenos,
    garlic, tomatoes, olives, and cheese. Possibly black beans in or as a
    side - I have those too.

    Then I'll put the rolls in a baking dish, cover them with sauce and more
    cheese, bake at 350 until bubbly, let sit and then serve. I like mine
    topped with sour cream, hubby doesn't.

    (slapping forehead) shoots, I forgot to get cilantro! I was going to try to
    remember that and I blew it!

    Oh well, hopefully they'll be good anyway. :~)

    Well, it's obvious he doesn't bathe but at least the slob shaves his
    legs, yes indeedy he sho nuff shaves them right up to his hairy fairy
    butt.
