Chicken & Broccoli Casserole Chicken Divan
From: "Agnes Spivey" <[email hidden]> I was reading
about broccoli being such a healthy food to eat. How can you
fix it so it tastes better than just boiling it.
here are a few of our favorite recipes
Chicken & Broccoli Casserole
3 cooked boneless, skinless chicken breasts, cubed 1 bunch
broccoli, chopped 1 can cream of mushroom soup 1 cup
mayonnaise 1 Tbsp garlic powder
1/4 cup butter melted 1 pkg. Stovetop cornbread stuffing mix
steam broccoli, then place in casserole dish. Layer chicken
on top of the broccoli. Mix mayo with can of soup and garlic
powder, place on top of chicken & broccoli. Mix melted
butter with dry stuffing mix and seasonings. Bake in
preheated oven 350 degrees for 30 minutes.
Chicken Divan
Servings: 6 to 8
6 chicken breast halves, cooked, boned and minced 2 packs
frozen minced broccoli 2 cans [10 ounces each] cream of
mushroom soup *note* 1 cup mayonnaise 8 ounces sour cream
1 cup Old Cheddar cheese, grated (sharp) 1 tablespoon
lemon juice 1 teaspoon curry powder *note* Salt and
pepper to taste
2/2 cup grated Parmesan cheese
3/2 cup fresh breadcrumbs Cook and drain broccoli.
Mix together cream of mushroom soup, mayonnaise, sour cream,
Cheddar cheese, lemon juice, curry powder, salt and pepper.
Arrange minced chicken over the bottom of 13 x 9 inch [33 x
23 cm] baking dish. Cover with broccoli. Add soup mixture;
pour over broccoli. Mix together parmesan cheese and fresh
breadcrumbs; sprinkle broccoli. Bake in a 350°F oven for
approximately 30 minutes.
note: you do not have to add the curry..........but I find
it gives a wonderful sweet refreshing taste to the
dish..... I often use boneless thighs, also because I
prefer dark meat..most like white meat
I have also substituted any kind of cream of soup to this
dish any kind you would like ((for example)) cream of
broccoli cream of chicken with mushrooms cream of celery
cream of potato
some tasty garlic bread and a salad, and what more could you
ask for? wonderful family or company or pot luck dish it is
so easy to make and everyone loves the taste
