This one is definitely authentic. A Brazilian co-worker,
from Pernambuco, just gave it to me - she is a great cook.
Another one to try tonight or this weekend...
Frango Caipira (Easy-to-make-and-bake Country-Style Chicken)
Chicken pieces, as many as you need Lemon juice Oil salt,
pepper chopped garlic Optional: a pinch of cumin 1 to 1-1/2
cups chunky, flavorful tomato sauce (such as marinara sauce)
over chicken.
1/2 cup of coconut milk Parmesan cheese.
Wash chicken first in lemon juice and pat dry Preheat oven
to 350 degrees Fahrenheit. Oil a Pyrex dish. Place chicken
pieces in Pyrex. Sprinkle with salt, pepper and chopped
garlic to taste. (Optional: a pinch of cumin) Pour chunky,
flavorful tomato sauce (such as marinara sauce) over
chicken. Pour, by tablespoonsful, no more than 1/2 cup of
coconut milk over the chicken and tomato sauce. Sprinkle
generously with Parmesan cheese. Cover with foil. Bake
approximately 1 hour until chicken is just about done.
Remove foil -- the steam will have made a nice sauce. Place
the Pyrex under the broiler a couple of minutes until
chicken is browned and tops of chicken pieces are rather
crispy. The ingredients can be put together the day before,
then baked when you are ready. Serve with rice. From:
