  1. Brandy Sugar Biscuits (Kourambiethes -- Greek Christmas biscuits)

    These traditional Christmas sweets with their marvelous flavor of cinnamon,brandy and roasted
    almonds are prepared all over Greece for the Christmas festivities

    3 cups flour
    1/2 cup caster sugar (superfine sugar) 1 cup coarsely ground roast almonds 1 Tbsp. ground cinnamon 1
    whole egg plus the yolk of 1 egg 2 cups olive oil 4 Tbsps Brandy 2-3 cups confectioners' or icing
    sugar (for coating)

    Pre-heat the oven to 350F, Gas Mark 4, 180 C Put sugar and olive oil into a bowl and beat
    thoroughly. Add almonds, cinnamon, eggs and brandy. Slowly beat in flour until mixture turns into a
    soft dough that does not stick to your hands. Divide dough into small pieces that can be moulded
    into a shape similar to a walnut. Place on a lightly greased baking sheet. Cook in the center of pre-
    heated oven for about 20 minutes. Remove from oven and allow to cool before sifting icing sugar over
    them until they are completely covered.
