I have an older relative (over 60) who's started a diet and cycling in order to loose weight and get fitter. Does anyone have any good book recommendations that will help encourage?

Thats a real tough one.
I dont recall seeing many books on this subject. Joe Friel has a book on cycling past 50!
At the age of 60 regeneration is much slower so your relative may have to really take their time putting more volume into the exercise. If your relative has been active over most of their life they may find it easier but if they have been sedentary for a while they really should take it very slowly. Have they consulted their GP? -

I started cycling at the age of 64 a bit over four months ago. I have brought my body fat percentage down from the mid 16's to 13.6% and my resting pulse down from 58 to 49. I am already riding with groups that maintain speeds over 20 mph, and can outsprint many that have been riding for years. My top speed so far in a sprint is 34.8 mph. Tell him there is lots of hope for old farts like us! 😄BTW, I rode 23 days last month, and progress is quite rapid!

I did think about Joe Friel's book, but I wonder if it's not too serious for? I haven't read it at all so have no idea.

Age is just a number! All your friend has to do is eat sensible foods and enjoy the ride.
