  1. We make this casserole all the time. Tim

    Pork Chop Casserole

    Serves 4

    2 cups long grain rice 1 large green pepper 1 quart of tomatoes 1 large onion 4 thick boneless loin
    pork chops or 8 thin boneless
    1/2 tsp oregano salt and pepper to taste 2 slices of bacon 3 cups beef broth

    You may add more pork chops for more people. We will also leave out the pork chops and just make a
    rice casserole. Brown pork chops in skillet, salt and pepper to taste Butter casserole dish. 1/2
    teaspoon rice over rice Layer ingredients as listed. Sprinkle oregano over top of everything. Pour
    Beef broth over everything. Preheat oven 375 degrees. 45 minutes covered 15 minutes uncovered
