  1. Blueberry Dessert Cake

    1/4 cup shortening
    1 cup white sugar
    1 egg
    1 tsp. lemon juice (fresh or bottled)
    2 tsp. baking powder
    1/4 tsp. baking soda
    1/4 tsp. salt
    1 3/4 cups flour
    1/2 cup milk
    2 cups blueberries

    Cream shortening and sugar. Add egg and blend well. Add remaining
    ingredients except berries and blend well. Carefully fold berries
    into the batter. Place batter into a greased tube pan. prepare
    topping.

    Topping:

    1/3 brown sugar
    1/2 tsp. cinnamon

    Combine sugar and cinnamon and sprinkle on top of uncooked cake.
    Bake in preheated oven at 350 degrees for 40 minutes or until cake
    tests done.

    NOTE: A 9x9 pan can be used but I find that with the moisture in
    berries, a tube pan bakes more evenly. My family prefers more berries
    so I usually put and extra 1/2 cup. If using frozen berries I would
    not add extra as they contain more moisture.
