Just bought a new Specialized Roubaix triple and its my first road bike. I am picking it up tomorrow and just wondered what they do to fit you to the bike? Thanks for any answers

totally depends on the shop - anything from a pat on the back and enjoy your bike, don't let the door hit you on your way out... to a Serotta fitting (though it would be likely you'd have to pay for that)
ideally they would put you on the bike on a trainer and at very least adjust the saddle height, saddle fore/aft position, position your brake levers comfortably, set up you handlebar height and make sure you have a good length of stem on the bike.
