IMHO, bike fit is a combination of understanding bike geometry, how a human
body mixes with it, and should also take into account the percieved use of
the bike. There are certain base rules like leg extension on downstroke,
lots of the rest is influenced by riding style.
I've helped fit a few novice friends for off-road bikes, partly from
knowledge gleaned from research I have done, partly from knowing their
riding style. I've always considered bike fitting to be one of the most
fundamental services provided by an LBS. When my wife and I were both
shopping for MTBikes, we expected to be fitted at each LBS we went to for
test rides. Granted the staff will fit you with an eye towards their
product lines, but they should still get you as close as they can without
swapping stems, etc.
If your favorite LBS can't help you, I'd be cautious of other services they
might offer.
