  1. Sounded good on the menu at the restaurant in Puerto Rico,
    but the breaded steak was as dry as the sole of my shoe...
    and less digestible.

    I thought I'd try it at home to do a better job... but need
    a recipe. Ideas?

    Biftec encebollado is not a breaded steak... That would be
    biftec empanado...

    For biftec encebollado you take cubed steak (about 3 pounds)
    and season it with adobo... since you go to PR often you can
    buy the Bohio brand with pepper but if not, use the goya
    brand with pepper... If the steaks are too big cut them in
    half crosswise... If they're too thick, bang them between
    plastic wrap until about 1/4 inch thick...

    Slice 2 large onions and separate the rounds...

    Mix white vinegar and olive oil - about 1/2 cup oil and 3/4
    cup vinegar... Add some of the adobo (about a teaspoon) and
    about 1 tablespoon oregano, and about 1/2 teaspoon black
    pepper... smash 3 cloves of garlic in a morter & pestle
    (pilon) and add it to the mix...

    Layer the steaks and the onions in a container with a cover
    that seals well... Pour the mixture over it and place the
    container in the fridge for a few hours, flipping it over
    every hour... If you season it the night before flip it over
    at least 2 or 3 times before you use it...

    Remove from fridge at least an hour prior to cooking... Or
    while you're making your rice and beans <smile>...

    In a large pot or caldero or chicken fryer, heat 1/4 cup of
    olive oil until very hot...

    Add a few of the steaks without the onions or the
    marinade... Cook this on high heat what we call "vuelta y
    vuelta" which means until it barely browns on each side...
    Place cooked steaks in a bowl and cover until they're all
    done... They just need to be cooked about a minute or 2
    total time and removed to the bowl...

    When they're all done, add the onions to the pot until
    they're almost soft and then add the leftover marinade...
    Cook until it reduces by half...

    Add the steaks to the pot with whatever liquid they
    released... Mix well and turn off stove (remove from
    heat)...

    The steaks are ready to eat after they steep in the sauce &
    onions for 5 minutes...
